Spicy Sesame Chicken Zoodles are easy to make and so delicious. The creamy tahini-based sesame sauce does double duty as the marinade in this 30-minute dinner recipe. You will LOVE it!
Ingredients
4mediumboneless chicken breasts, cut into bite-sized pieces
4mediumzucchinis, sliced into noodles with a julienne peeler
2tablespoonssesame oil, divided
Sesame seeds, to serve
The Sesame Sauce
¼cupsoy sauce, gluten-free or coco aminos as needed
¼cuptahini
¼cupsesame oil
1tablespoonrice vinegar
1tablespoonhoney
1tablespoongarlic chili sauce
1tablespoongrated fresh ginger
Instructions
Mix all the sesame sauce ingredients together. Place the chicken breasts in a bowl and pour ½ cup of the sauce over the top. Mix the chicken then set it aside to marinate while you cut the zucchini noodles.
4 medium boneless chicken breasts, ¼ cup soy sauce, ¼ cup tahini, ¼ cup sesame oil, 1 tablespoon rice vinegar, 1 tablespoon honey, 1 tablespoon garlic chili sauce, 1 tablespoon grated fresh ginger
Heat 1 tablespoon of the sesame oil in a large pan over medium-high heat. Add the chicken and all the marinade to the pan. Cook, occasionally scraping the brown bits off the bottom of the pan, until the chicken is cooked through, about 10 minutes. Remove the chicken from the pan.
Add the remaining tablespoon of sesame oil and the zucchini noodles to the pan. Let them cook for 2-3 minutes, until they begin to soften.

Add the reserved sauce and the chicken into the pan and toss to coat. Let the sauce cook for 1 minute to thicken it. Serve with some sesame seeds sprinkled over the top.
