Chipotle Pulled Pork Tacos with Chayote Squash and Apple Slaw

Between mouthfuls of sweet, tender pork, crispy apples, chayote squash and soft homemade corn tortillas, these Chipotle Pulled Pork Tacos are incredible!
1 ½ lbpork butt
1tablespoonchipotle peppers in adobo sauce
2clovesgarlic, finely minced
¼ cup plain yogurt
1smallgarlic clove, minced
1mediumcrisp apple, diced
½chayote squash, cut into small strips
½cupfinely shredded red cabbage
¼cupfinely sliced red onion
Optional toppings: sour cream, guacamole, salsa
Put the pulled pork ingredients into your slow cooker and cook on low heat for 8-10 hours. When it's finished cooking, transfer the pork to a bowl and shred it with 2 forks.
1 ½ lb pork butt, 1 cup beer, ¼ cup brown sugar, 1 tablespoon chipotle peppers in adobo sauce, ½ teaspoon sea salt, ¼ teaspoon cumin, 2 cloves garlic
Pour the liquid from the slow cooker into a small pot and bring it to a boil over high heat. Boil until the sauce is thick enough to coat a spoon then pour it over the pulled pork.
In a large bowl, mix the yogurt, mayonnaise, lime juice, garlic, and salt. Add the apple, chayote squash, cabbage, onion, and cilantro and toss to coat.

Warm the tortillas wrapped in a cloth in your microwave for about 20 seconds.
8 small corn tortillas
Top the warm tortillas with pulled pork, slaw, and any or all of the toppings.
