A pinch of sea salt
The Kale Waldorf Salad
3cupscurly kale, packed
1cupchopped walnuts, toasted
1crisp apple, diced
Mix all the dressing ingredients in a medium-sized bowl.
¾ cup Greek yogurt, 3 tablespoons honey, 2 tablespoons mayonnaise, 1 teaspoon lemon juice, ½ teaspoon dijon mustard, A pinch of sea salt
Place all the salad ingredients into a large bowl.
3 cups curly kale, 1 cup grapes, 1 cup chopped walnuts, 2 stalks celery, 1 crisp apple, ½ cup dried cranberries
Pour the dressing over the top then toss well to make sure all the pieces of kale are well coated. Let the salad sit for about 10 minutes so the kale softens and the flavors blend together.
If you have any leftover salad, it keeps well for a couple of days in the fridge.
