These Cajun sweet potato fries are covered in tasty Cajun spices that are smoky and a little spicy and baked to perfection. Then, as if they're not good enough, they're served with an easy-to-make blue cheese dip. This is heaven, we're sure of it!
Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the sweet potato strips in a large bowl, add the olive oil and Cajun seasoning, and mix well.
2 medium sweet potatoes, 2 tablespoons olive oil, 1 ½ tablespoons Cajun seasoning
Arrange the fries on the baking sheet so that they are in a single layer and not touching each other. Bake in the oven for 25-30 minutes, until they are soft with several crispy spots.
While the fries are in the oven, make the blue cheese yogurt. In a small bowl mix together the yogurt, blue cheese, dijon, salt, and pepper.
⅓ cup Greek yogurt, ¼ cup blue cheese, 1 teaspoon dijon mustard, 1 pinch EACH: salt and pepper
Serve the fries with a little chopped parsley on top and the blue cheese yogurt on the side.
Chopped parsley
