This beet smoothie is packed with nutrients, balanced with sweet berries and coconut milk (promise it doesn't taste like the garden the beet grew in), and is simple to make with just 4 ingredients. Swap this magenta pink smoothie for your regular green smoothie - you won't regret it!
Ingredients
1mediumbeet, diced (see notes)
1cupfrozen blueberries
½cuplight coconut milk, shake the can well before you open it to mix the cream with the milk
½cupcold water
Instructions
Place all the ingredients in a high-powered blender and blend on high for 30 seconds.
1 medium beet, 1 cup frozen blueberries, ½ cup light coconut milk, ½ cup cold water
Drink up your raw beet smoothie!
Notes
This recipe works best in a high-powered blender. If you have a regular blender, either grate your beets or use cooked beets.
