When a cookie craving strikes in the mid-afternoon or after the kids have gone to bed, this is the cookie I make. It's basically a paired down version of my brown sugar oatmeal cookies, but it's made in one bowl and mixed with a fork so it's as easy as can be. I have to warn you, this is a big cookie! If you want to share this with someone, or hide one away for later, feel free to make two cookies with the dough.
Preheat your oven to 350 degrees Fahrenheit. In a small bowl (like a cereal bowl), microwave the butter for 10 seconds - it should not melt.

Using a fork, mix in the brown sugar. Add the egg yolk, vanilla, and molasses and mix well.

Add the flour, baking soda, cinnamon, and salt and mix. Stir in the oats, chocolate chips, and raisins.
4 tablespoons all-purpose flour, ⅛ teaspoon EACH: baking soda and cinnamon, 1 pinch salt, 4 tablespoons quick oats, 1 tablespoon EACH: chocolate chips and raisins
Roll the dough into a ball and place it on your baking sheet. Use your hand to flatten it out so that it is about 4 inches round. OR make two cookies and flatten them out to 3 inches around.
Bake for 14-16 minutes, until the edges look crispy and the center is cooked through. Let the cookie cool for 10-15 minutes on the baking sheet - the hardest part!If you're making two cookies, bake them for 10-12 minutes.
Notes
Make two cookies: If you'd rather make two normal-sized cookies, go for it! They will take about 10-12 minutes to bake. Egg: If you'd like to omit the egg, mix the baking soda with 1 tablespoon of hot water and add that with the flour in step 3. It works quite well, but we liked the flavor better with the egg yolk.Raisins: If they are not your thing, swap them for more chocolate chips.
