This is my rich ground beef spaghetti sauce made from kitchen staples. Brown the onion deeply, then the beef, then let a whole can of tomato paste darken in the pot. It tastes like it was long-simmered in a fraction of the time.
Heat the olive oil in a large pot over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Reduce the heat to medium and continue cooking, stirring occasionally, until it is quite dark, about 10 minutes more. Stir in the garlic.
1 tablespoon olive oil, 1 large onion, 3 cloves garlic
Add the ground beef, salt, and pepper and cook until the meat is no longer pink. Push the meat to the sides of the pot, add the tomato paste, and cook until it darkens and becomes sweet-smelling, about 3-4 minutes.
2 lb lean ground beef, 5.5 ounce can tomato paste, 1 teaspoon EACH: sea salt and pepper
Add the crushed tomatoes and Italian seasoning, and bring the pot to a simmer for 10 minutes. Season with extra salt and pepper if wanted, then serve over pasta.
28 ounce can crushed tomatoes, 2 teaspoons Italian seasoning
