Place an oven rack in the bottom half and preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. Mix the brown sugar, cinnamon, and salt in a small bowl.
½ cup brown sugar, 1 teaspoon cinnamon, ½ teaspoon salt
In a medium-sized bowl, whisk the egg white until it's frothy.

Add the hazelnuts to the egg whites and mix well. Then, add the sugar mixture and mix again.
3 cups whole hazelnuts
