Instructions
Place the water, rolled oats, and vanilla in a small pot over high heat. Bring it to a boil and then reduce the heat to low, cover, and simmer for 10 minutes. Add the almond butter to the pot and stir briskly for 1 minute. Continue to cook for 3-4 more minutes, or until the oats are soft.
1 cup rolled oats, ¼ cup almond butter, 1 teaspoon vanilla, 2 cups water
While the oats are cooking, make the bananas. Melt the coconut oil in a small frying pan over medium-high heat. Slice the bananas and sprinkle the brown sugar over both sides. Add them to the pan in a single layer and fry until they're golden brown, about 1-2 minutes. Flip the bananas over and let them caramelize on the other side, about 1-2 minutes more.
1 tablespoon coconut oil, 1 medium bananas, 2 teaspoons brown sugar
Optional step: For super creamy almond butter oatmeal, place the oatmeal into your blender and blend on high until smooth.
Divide the almond butter oatmeal between 2 bowls and then top with the caramelized bananas and any or all of the toppings

Notes
Oats: You can use quick oats if you prefer. You'll only need to cook them for 2-3 minutes.
