This chipotle mayo is a little bit spicy, a little bit smoky, and very easy to make. Use it as a dip or slather it on burgers and sandwiches to add a punch of flavor and heat. This popular condiment keeps well in the fridge, and it's ready in just 5 minutes!
Ingredients
¾ cupmayonnaise
1tablespoonlime juice
1tablespoonmaple syrup
1 ½ teaspoonspureed chipotle peppers in adobo sauce, see notes
12dropsliquid smoke, see notes
1large garlic clove
1 ½ teaspoons dijon mustard
½ teaspoon salt
Instructions
Add all of the ingredients to a small mixing bowl and mix well.
¾ cup mayonnaise, 1 tablespoon lime juice, 1 tablespoon maple syrup, 1 ½ teaspoons pureed chipotle peppers in adobo sauce, 12 drops liquid smoke, 1 large garlic clove, 1 ½ teaspoons dijon mustard, ½ teaspoon salt
Either serve it right away or store it for up to 10 days.
Notes
We like to buy a can of chipotle peppers in adobo sauce and then puree them. You can store the pureed peppers in a clean jar in your fridge for a very long time. You can also simply use some of the adobo sauce that is in the jar. Liquid smoke is an inexpensive ingredient that keeps nearly forever in your pantry. It is available online or near the BBQ sauces in most grocery stores and it adds a wonderful smoky flavor to the mayo.
