These delicious dill carrots are roasted until tender then tossed in a homemade lemon dill dressing and topped with tangy feta cheese. It's an easy side dish that goes with just about anything, and it's ready in 40 minutes!
Ingredients
2 ½ lbcarrots, peeled and sliced ¼" thick
1tablespoonolive oil
½ teaspoonEACH: garlic powder, onion powder, salt, and pepper
¼ cupfeta cheese, optional
Lemon Dill Dressing
1tablespoonolive oil
1tablespoonlemon juice
1teaspoonhoney
1teaspoondijon mustard
2tablespoonsminced fresh dill, or 2 teaspoons dried dill
Instructions
Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Put the sliced carrots into a bowl and toss them with olive oil, garlic powder, onion powder, salt, and pepper.

Spread the carrots out on the baking sheet and roast in the oven for 30 minutes.
While the carrots are roasting, make the sauce. In a small bowl, whisk the olive oil, lemon juice, honey, and dijon. Mix in the chopped dill.
