These creamy sour cream and chive mashed potatoes are an easy and delicious side dish for weeknights, or holiday dinners. Made with yukon gold potatoes, sour cream, real butter, and chives, they're a crowd pleasing vegetarian side, and they're ready in just 20 minutes!
Ingredients
3lbpotatoes, we like a mix of Yukon Gold and Russett
1cupsour cream
2tablespoonsbutter
2teaspoonssea salt
¼ cupminced chives
Instructions
Peel the potatoes and cut them into equal-sized chunks. Put the potatoes into a large pot and cover them with 1-inch of water. Boil the potatoes for 10-15 minutes (depending on the size you cut them), until they can easily be pierced with a knife. Drain the water from the pot.
3 lb potatoes
Add the sour cream, butter, and salt to the pot and let the butter melt.
1 cup sour cream, 2 tablespoons butter, 2 teaspoons sea salt
Mashed the potatoes using a potato masher then stir in the chives.
