This raspberry mimosa with fresh berries and orange juice will brighten up any special occasion. With a touch of honey, it's naturally sweet and easy to make in just 15 minutes!
Ingredients
2cupsraspberries
1cuporange juice
¼cuphoney, see notes
1bottle sparkling wine
Instructions
Place the raspberries, orange juice, and (if using) honey into your blender and blend on medium speed until the raspberries have broken down.
2 cups raspberries, 1 cup orange juice, ¼ cup honey
Strain the juice through a fine-mesh sieve, pressing on the pulp to squeeze out the juice.
Add ¼ cup of the raspberry juice to a flute glass then carefully fill the glass with sparkling wine. It will foam a lot so go slowly and pour against the side of the glass. Add a few raspberries to the glass to garnish.

Notes
If you know that you like sweeter drinks, add honey. If you prefer a drier cocktail, leave it out. This recipe makes 2 cups of raspberry juice which is enough to make 8 mimosas. Depending on the size of your flute glasses you may need more than one bottle of sparkling wine.If you'd like to sugar the rim of your flute glass, dip it in water and then in sugar.
