These strawberry mojitos are easy on the eyes, smell like summer, and the first sip will put a smile on your face! This strawberry mojito recipe blends summer-fresh strawberries, bright herbs like mint and basil, a dash of white rum, and freshly squeezed lemon juice.
Ingredients
6largemint leaves

1ouncewhite rum
½ ouncefresh lemon juice
2ouncessoda water
Sliced strawberries, mint, and basil leaves, to garnish
Strawberry Simple Syrup
1cupwater
1cupgranulated sugar
1cupchopped strawberries
Instructions
Begin by making the strawberry syrup. Combine the water, sugar, and strawberries in a pot and bring it to a boil. Reduce the heat to low and simmer for 5 minutes, mashing the strawberries with a spoon when they're soft.

Remove the pot from the heat, let it cool slightly, then strain it through a fine-mesh sieve. See notes.
Add the mint, basil, and simple syrup to a cocktail shaker and muddle for about 30 seconds. Put a handful of ice into the shaker, add the rum and lemon juice, and stir until it's cold.

Strain your strawberry mojito into a tall, ice-filled glass, top it with soda water, and garnish with strawberries, mint, and basil.

Notes
This recipe makes enough simple syrup for 8 mojitos. Store any leftover syrup in your fridge for up to a month. Don't discard the strawberries after you make the syrup - they're delicious! Serve them over ice cream or on top of yogurt. Or simply eat them by the spoonful. To make a pitcher, use cups instead of ounces. Muddle 1 cup of strawberry simple syrup with a handful of basil and mint leaves. Strain it into a pitcher then stir in 1 cup of white rum, ½ cup of lemon juice, and 2 cups of soda water. You can double or triple the recipe as needed. Add a handful of basil leaves and some strawberries to the pitcher to make it look pretty!
