Cheddar Cauliflower is the ultimate veggie dish: start by tossing your cauliflower in aromatic spices, then roast in the oven until golden brown. Top it off with sharp Irish cheddar and pop it back in the oven until it becomes partly melted and gooey and partly crispy. It's like cauliflower with cheese sauce—only a thousand times better!

Spread the cauliflower around the baking sheet and then bake in the oven for 35-40 minutes, or until the cauliflower is nicely browned.

Notes
Sharp cheddar cheese will give the best flavor. We especially love using Irish cheddar.
