This boldly-flavored brussels sprouts pizza features roasted brussels sprouts, caramelized onions, and blue cheese. It's baked until it's golden and crispy, then finished with a sweet balsamic glaze. It's surprisingly delicious, it's easy to make, and it's ready in under an hour!
Ingredients

1lbbrussels sprouts, cut in half
2tablespoonsolive oil, divided, plus more for drizzling on the pizza
1largered onion, thinly sliced
1pinchsugar
½ cupparmesan cheese
1 cupcrumbled blue cheese
Balsamic glaze and Italian parsley, to serve
Instructions
Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. Toss the brussels sprouts with 1 tablespoon of olive oil and a pinch of salt and toast them for 15 minutes.

While the brussels are roasting, prepare the caramelized onions. Add the red onion plus the remaining tablespoon of olive oil to a large frying pan over medium-high heat. Let the onions cook until they are soft, then lower the heat to medium-low, sprinkle a pinch of sugar over the top, and let the onions caramelize for another 5 minutes.

Arrange the pizza dough onto baking sheets or a pizza pan. Drizzle the top of the crust with olive oil then sprinkle the parmesan cheese over top. Add the onions and brussels sprouts then dot with blue cheese.

Bake the pizza for 12-15 minutes, until the cheese has melted and the crust is cooked. Serve the pizza with a little parsley on top and drizzled with balsamic glaze. If you'd like, you can add a little more blue cheese before serving.
