Sweet potato hummus is about to become your newest favorite hummus recipe. It is a bean-free hummus made with roasted sweet potatoes, tahini, and lime juice. It's an easy, delicious, and healthy fall recipe!
Ingredients
1 ½lbssweet potatoes, about 2 medium sweet potatoes, peeled and chopped
4tablespoons+ 1 teaspoon olive oil, divided
½cuptahini
juice from 1 lime, about 3 tablespoons
1teaspoonsalt
1clovegarlic
Instructions
Preheat the oven to 400 degrees.
Toss the sweet potatoes with 1 teaspoon of the oil, put them on a baking sheet, and roast in the oven for 20 mintutes. Let them cool slightly then add the them to a food processor.

Add all the remaining ingredients and blend on high for 1 minute. With the motor running, slowly add cold water until it is very creamy and a hummus consistency. You'll need to add about 1 cup of water. Taste and season with extra salt, if needed.
