Kale apple salad is one of our favorite kale salad recipes. The kale is softened with a sweet salad dressing and then mixed with crunchy apples, toasted almonds, and cheddar cheese. It's delicious!
Ingredients
2 ½cupswell-packed kale leaves
½cupdiced cheddar cheese
½cuptoasted chopped almonds, slivered or sliced work, too
1largeapple, diced
The Dressing
⅓cupapple cider vinegar
¼cuphoney, can sub maple syrup
2teaspoonsbalsamic vinegar
1teaspoonDijon mustard
2clovesgarlic, grated on a Microplane or very finely minced
A pinch of sea salt
½cupextra virgin olive oil
Instructions
Place the dressing ingredients into a 2-cup mason jar and shake well.
⅓ cup apple cider vinegar, ¼ cup honey, 2 teaspoons balsamic vinegar, 1 teaspoon Dijon mustard, 2 cloves garlic, A pinch of sea salt, ½ cup extra virgin olive oil
Add the kale to a large salad bowl, pour the dressing over top and mix well. Let the kale sit for 5 minutes to soften.
2 ½ cups well-packed kale leaves
Add all the remaining ingredients and mix together.
½ cup diced cheddar cheese, ½ cup toasted chopped almonds, 1 large apple

The amount of dressing made in this recipe should be good for 2 or more salads.
