½ cuphoney, see notes
½ cuplemon juice, freshly squeezed for the best flavor
6cupswater, divided
Instructions
Add the cubed mango to your blender and blend on high speed until smooth. Optional: strain the juice through a fine-mesh sieve to remove the pulp.
3 cups cubed mango
Make the honey syrup by mixing the honey and 1 cup of hot tap water in a cup until the honey dissolves.
½ cup honey
Pour the mango juice, honey syrup, lemon juice, and remaining 5 cups of cold water into a pitcher. Stir well then serve over ice.
½ cup lemon juice
Notes
If you'd like to use sugar instead of honey, you'll need to bring the water and sugar to a simmer to dissolve the sugar. While any variety of mango will work with this recipe, we almost always buy Ataulfo mangoes as they're extra sweet and delicious. Sugar mangos (sometimes called honey mangoes) are also wonderful.
