Minestrone soup is a hearty Italian vegetable soup that's traditionally made with vegetables, beans, tomato broth, and pasta or rice.

It's a soup that's meant to use up abundant seasonal vegetables and greens, which makes it really versatile with the seasons.


- olive oil - onion - carrots - celery - garlic - mini potatoes - chicken bone broth - chili flakes - asparagus spears


Heat the olive oil in a large soup pot over medium heat.

Add the onion, carrots, and celery and cook until the onion is translucent, about 3 minutes.

Add the garlic and cook for one minute more. Add the potatoes, bone broth, and chili flakes, and bring the pot to boil.

Reduce the heat and simmer gently with the lid partially on the pot for 10 minutes.
