BLACKBERRY LAVENDER SODA

Fresh blackberries simmered in culinary lavender make an aromatic syrup for this blackberry lavender soda.

It's quick and easy to make at home and extra syrup can be stored in the fridge for up to a week!

INGREDIENTS

-  blackberries - water - granulated sugar - dried lavender flowers

INSTRUCTIONS

In a medium pot, combine the blackberries, water, sugar, and lavender.

Bring to a boil over high heat, and stir to dissolve the sugar. Reduce the heat to medium or medium-low and simmer, uncovered, for 5 minutes.

Mash the berries with a spoon then continue to simmer for another 5 minutes. Remove the pot from the heat and let the syrup cool slightly.

Use a fine-mesh sieve to strain the berries and lavender from the syrup, making sure to press the berries against the strainer to extract as much liquid as possible.
