Ingredients
Watermelon Margarita
- 2 cups watermelon chunks = 1 cup watermelon juice
- Optional: 1 jalapeƱo pepper, seeds and stem removed
- 1 cup tequila
- ½ cup lime juice, freshly squeezed, please!
- ½ cup honey simple syrup, see notes
- Maldon or flake type sea salt, to rim the glasses
Instructions
- Put the watermelon, and the jalapeƱo, if using, into your blender and blend on high for a few seconds.2 cups watermelon chunks = 1 cup watermelon juice, Optional: 1 jalapeƱo pepper
- Whisk 3 tablespoons of honey with 5 tablespoons of water to make the honey simple syrup. They will combine best if heated.
- Combine the watermelon juice, tequila, lime juice, and honey simple syrup in a glass jar filled with ice and stir until the margarita is cold.1 cup tequila, ½ cup lime juice, ½ cup honey simple syrup
- Wet the rim of 4 glasses with lime then dip them in salt and pour in your watermelon margarita!Maldon or flake type sea salt

This recipe is very easy to scale up or down. Here's what you need to know:
- 1 cup of watermelon chunks will make ½ cup of watermelon juice
- Honey simple syrup is made with 1 part honey and 2 parts water. For example, 1 cup of honey and 2 cups of water.
- This watermelon margarita is made with 2 parts watermelon juice, 2 parts tequila, 1 part lime juice, and one part honey simple syrup. For example, 2-ounces watermelon juice, 2-ounces tequila, 1-ounce lime juice, and 1-ounce honey simple syrup.

Waaayyyyyy too much lime juice! The ratio is way off making the watermelon useless. Lessen the lime, omit the honey, add a little water ,or shake with ice to improve the viscosity. I have to head back to the store and start over. How disappointingĀ
We tested this quite a few times and with less lime juice it really didn’t work. Margaritas are supposed to have a strong citrus element and without that, they fall short and aren’t very flavorful. But personal preference is obviously important so definitely experiment to find the balance that works for you.

It looks like a lot of your salt rims are mixed with what i’m assuming is some zest of whatever fruit your using??? Looks beautiful. The grapefruit margarata has grapefruit zest? the watermelon marg has lime zest??? Or are you using other ingredients? I like mixing the salt with some chili powder for my watermelon marg. Thanks!
That was some salt mixed with a little lime zest. Sometimes I add very finely minced red chili to the mix. It’s delicious. š
