These creamy sour cream and chive mashed potatoes are an easy and delicious side dish for weeknights or holiday dinners. Made with yukon gold potatoes, sour cream, real butter, and chives, they're a crowd-pleasing vegetarian side, and they're ready in just 20 minutes!

These savory mashed potatoes are the perfect pair with our creamy chicken mushroom recipe and a side of green beans with garlic scapes aioli.

For this recipe, we take sour cream and chives, a classic baked potato topping, and mix it into velvety mashed potatoes. They're flavorful and delicious, and all you need is a handful of ingredients to make them.

Simply boil the potatoes until tender, add the sour cream, butter, salt, and chives and mash until creamy. We just use a potato masher, but using a hand mixer will make them extra velvety. Top with freshly ground black pepper, if you'd like, and serve them warm with almost any dinner menu.

It's an easy and irresistible side dish for weeknights, holidays, and dinner parties that everyone will love!

Here's everything you'll need to make these sour cream and chives mashed potatoes:

  • Potatoes – we used a mix of yukon gold and russet potatoes for this recipe.
  • Sour cream – this star ingredient adds creaminess to the potatoes and a little tangy taste. You can use light, if you prefer.
  • Butter – for added richness and flavor.
  • Sea salt – a couple of teaspoons of sea salt helps to bring out all the other flavors.
  • Chives – the delicate flavor of fresh chives has a mild onion flavor with hints of garlic.

How to make sour cream and chive mashed potatoes

It's easy to make these flavorful mashed potatoes with sour cream and chives in a few simple steps:

  1. Start by peeling and chopping the potatoes. Next, simmer them in water until they're soft then drain the water from the pot.
  2. Add the sour cream, butter, and salt to the pot and let the butter melt.
  3. Finally, mash the potatoes using a potato masher or fork, then stir in the chives. That's it!

Can I use green onions instead of chives?

Yep, in a pinch use the light green parts of green onions, thinly sliced, in place of chives.

How long do they keep in the fridge?

Store leftover mashed potatoes in the fridge in a sealed container for 3-4 days.

What to serve with sour cream and chive mashed potatoes

These creamy mashed potatoes are so versatile and pair well with chicken, pork chops, other meat mains, and just about any vegetable side. In the pictures, we serve them alongside our creamy sundried tomato chicken (pictured below).

Ingredients

  • 3 lb potatoes (we like a mix of Yukon Gold and Russett)
  • 1 cup sour cream
  • 2 tablespoons butter
  • 2 teaspoons sea salt
  • ¼ cup minced chives

Instructions 

  • Peel the potatoes and cut them into equal-sized chunks. Put the potatoes into a large pot and cover them with 1-inch of water. Boil the potatoes for 10-15 minutes (depending on the size you cut them), until they can easily be pierced with a knife. Drain the water from the pot.
