Description

Raw Beet Smoothie with coconut and blueberries is a healthy and delicious breakfast. The mild beet flavor goes well with the coconut and sweet blueberries. Go ahead, drink up your beets!

Ingredients

  • 1 medium beet, diced (see notes)
  • 1 cup frozen blueberries
  • ½ cup coconut milk (shake the can well before you open it to mix the cream with the milk)
  • ½ cup cold water

Instructions

  1. Place all the ingredients in a high-powered blender and blend on high for 30 seconds.
  2. Drink up your raw beet smoothie!

Notes

This recipe works best in a high-powered blender. If you have a regular blender, either grate your beets or use cooked beets.
