Raw Beet Smoothie with coconut and blueberries is a healthy and delicious breakfast. The mild beet flavor goes well with the coconut and sweet blueberries. Go ahead, drink up your beets!
- 1 medium beet, diced (see notes)
- 1 cup frozen blueberries
- ½ cup coconut milk (shake the can well before you open it to mix the cream with the milk)
- ½ cup cold water
- Place all the ingredients in a high-powered blender and blend on high for 30 seconds.
- Drink up your raw beet smoothie!
This recipe works best in a high-powered blender. If you have a regular blender, either grate your beets or use cooked beets.
