This delicious and healthy chia seed pudding is made with creamy Silk Cashew Milk and topped with pomegranate and coconut flakes. Yum!
- 2 cups Silk Cashew Milk
- ½ cup chia seeds
- 3 tablespoons pure maple syrup
- 1 teaspoon pure vanilla
- A pinch of sea salt
- For garnish: pomegranate seeds and coconut*
- Whisk all the ingredients except the pomegranate seeds and coconut together in a medium sized bowl. Cover and let it sit overnight in your fridge.
- Spoon into 2-4 glasses or bowls and top with some coconut and pomegranate seeds.
You will probably want more pomegranate seeds and coconut than what I have shown in the picture here. Use as much or as little as you like.
