For a classic warming curry dinner, make this butter chicken next!
This Indian meatball curry starts with a simple Indian masala base ā a fragrant combination of well-cooked onion, ginger, garlic, tomatoes, and spices. Then, it's blended so it's extra velvety! The meatballs are subtly spiced to complement, rather than overpower, the warming curry sauce. The result is well-balanced flavors, with savory richness, a creamy texture, sweet undertones, and a hint of tang, with the bite of succulent meatballs.
Is this a traditional Indian recipe?
This recipe is made with the wonderful flavors that we associate with Indian cooking ā cumin, coriander, and curry powder infused into a tasty masala made from onion, ginger, garlic, and tomatoes. We can't claim that this recipe is authentic, but we can tell you that it is very delicious.
Ingredients needed
The lightly spiced, tender meatballs simmer away in the velvety, creamy curry base. This recipe is made from simple ingredients ā gather these items:
- Onions, garlic, and ginger:Ā This aromatic trio forms the flavor base of both the curry and the meatballs.
- Crushed tomatoes:Ā Adds a rich tomato base with a little tang.
- Creamy base: Use plain yogurt, whipping cream, coconut milk, or cashew cream ā You can use whichever you have on hand and best suits your diet. All of them are delicious!
- Almond butter or tahini:Ā Introduces nutty undertones.
- Brown sugar or coconut sugar:Ā Balances out the curry with a subtle sweetness.
- From the spice rack: A blend of curry powder, cumin, ground coriander, and sea salt.
- Oil: For sauteing.
- Meat: Use ground beef, pork, or lamb ā or, a combination!
- Fish sauce: For a umami note in the meatballs.
How to make Indian meatball curry
This recipe comes together easily ā simply make the curry sauce, the meatballs, then add it all together! Here are the instructions:
- Curry prep: On medium heat, saute the onion, garlic, and ginger. Then add the spices and toast them for a minute. Add the tomatoes, scraping up any stuck bits on the bottom of the pan. Transfer everything to a blender with a cup of water, cream, almond butter, salt, and sugar and blend until smooth and velvety.
- Meatball mix: Mix all the meatball ingredients in a large bowl and then form the mixture into 12 loose balls. Brown them in a skillet.
- Bring it all together: Pour the curry over the meatballs, letting them simmer together. Serve over rice with some cilantro!
Tips for making Indian meatballs
Tender meatballs might not be a common protein in Indian cuisine, but they are SO easy to fall in love with. For this recipe, we went back to our lemongrass Vietnamese meatballs and tweaked them by adding flavors we associate with Indian cuisine.
The flavor has been toned down enough that it doesn't compete with the curry sauce ā but they're still delicious on their own!
Make sure you mince the onion, ginger, and garlic until they're almost a paste to help keep the meatballs tender.
Another tip is to avoid packing them tightly. You want to use a gentle hand and avoid really squishing them together. Easy does it!

Recipe FAQs
How can I make this gluten-free or dairy-free?
It is already gluten-free! Just be sure to check product labels for any additional ingredients that might contain gluten. To make it dairy-free, simply opt for a dairy-free cream base, like coconut milk or cashew cream.
How do I store leftovers?
Leftovers taste even better the next day! Store in an airtight container for 3-4 days in the fridge. When reheating, be mindful not to reduce the sauce too much. If it's too thick, you can always add a bit of water to reach the desired consistency. This recipe stores well in the freezer, too, for up to three months.
Can I adjust the spice level?
Yes, this has been made without chilies, but feel free to add some red or green chilies, or some chili flakes or chili powder.
Can I change up the protein?
Sure! As you'll see in the recipe, we suggest a variety of proteins: pork, beef, lamb, or a combination. You could also try ground turkey.
