- 1 tablespoon Thai red curry paste
- 1 tablespoon soy sauce (gluten-free if needed)
- Ā½ tablespoon harissa paste
- 1 medium shallot
- 1 large garlic clove
- 1 inch piece of ginger (peeled)
- Juice from 1 lime
Veggie Noodles
- 3 medium zucchinis
- 2 large carrots
- 1 globe eggplant
- A handful of cilantro
- Sesame seeds (to garnish)
Instructions
- Place all the coconut curry sauce ingredients into your blender and blend on high until smooth. Is this recipe always eaten cold ?
You could gently heat it in a pan if you would like it warm. If you do, don’t let the noodles sit in the sauce or they will get too soft. The dish ends up being room temperature as neither the veggies or sauce are cold.
