Turn your leftover Christmas or Thanksgiving turkey into a BBQ Pulled Turkey Pizza. It’s easy to make, so delicious, and perfect for when you’ve spent the last couple of days eat holiday dinner leftovers. You will LOVE it.

  • ½ pizza dough recipe (see notes)
  • 1 ½ cups diced fresh pineapple
  • ¼ cup minced red onion
  • ¼ cup chopped cilantro
  • Juice from ½ lime
  • ½ Serrano or jalapeno pepper, minced
  • 1 ½ cups shredded cooked turkey
  • 3/4 cup bbq sauce, divided
  • mozzarella cheese, preferably fresh
  • Sea salt

  1. In a medium-sized bowl, mix the pineapple, red onion, cilantro, lime and Serrano pepper.
  2. Follow the directions for the pizza dough by carefully stretching the dough to form an oval or rough circle. Either place the pizza crust on an upside-down a baking sheet or on your pizza peel if you’re using a pizza stone.
  3. Mix the shredded turkey with 1/2 cup of your favorite BBQ sauce. Divide the remaining 1/4 cup of BBQ sauce between the two pizzas. Top with the shredded turkey, mozzarella cheese, and a sprinkle of sea salt.
  4. Bake the pizzas, one at a time, in your oven for 10 minutes if you are using a baking sheet, or 7 minutes if you are using a pizza stone. When the turkey pizza comes out of the oven, sprinkle the pineapple salsa over top.

This pizza dough recipe is my all-time favourite. It does take 18 hours for the dough to rise, so if you use it do plan accordingly.
