This salad is one of those recipes, that's so special and delicious, you'll be known for it. While that all might sound a bit fancy, this arugula wild rice salad is still super easy to throw together!
Ingredients needed
The token of an amazing salad is contrast: different textures and tastes melding together to create something crave-worthy, and this wild rice arugula salad delivers just that. It has it all: sweetness, savory, citrus, crunch, and fresh flavors. These are the ingredients:
- Wild rice:Ā Nutty wild rice adds a satisfying bite.
- Baby arugula:Ā Peppery arugula is crisp and nutritious. Spring mix can be substituted.
- Halved grapes:Ā For a burst of sweetness.
- Toasted almonds: Chopped nuts provide a satisfying crunch.
- Goat cheese:Ā Tangy and creamy, the goat's cheese melds with the other flavors. If you don't love goat cheese you could use crumbled feta cheese. Or try blue cheese for a stronger bite.

How to make arugula wild rice salad
Don't you love it when something so delicious is so simple? This recipe is as straightforward as cooking the rice, making the dressing, then throwing everything in a bowl- done! This is how it's done:
- Boil rice: Bring the wild rice to a boil in a large pot of water then let it simmer away ā it's done when lots of the kernels have burst open. Drain, and let cool.
- Make the dressing: While the rice simmers away, make the dressing by whisking together the lemon juice, dijon, honey, and salt. Whisk in the oil slowly to see the dressing turn creamy, then throw in the poppy seeds.
- Assemble and serve: Add all the other ingredients to a large bowl, adding the cooked and cooled rice. Toss and pour the dressing over and enjoy!
How is wild rice different?
Here is a fun fact: wild rice isn't even true rice! It's actually a type of aquatic grass ā the more you know! It differs from brown and white rice in its appearance, taste, texture, and nutrition:
- Appearance: The first difference you'll notice will be the appearance ā its long, slender, needle-like grains are brown or black in color.
- Taste: Wild rice has a rich, nutty flavor.

While we have never done it, you can certainly try it. It will change the final result, but there will still be lots of delicious flavors to enjoy. The ratio of how much to use is 1 teaspoon of dried herbs to 1 tablespoon of fresh herbs.
Can I make the rice in advance?
You totally can. Just keep it in the fridge in an airtight container and use it within 4 days of cooking.
How long should I cook the wild rice?
The cooking time will vary greatly depending on the exact wild rice you use. Follow the directions, bringing to a boil then letting it simmer while covered for 40-60 minutes. Check the rice after 40 minutes and see if the kernels have burst open. If it's not done at that time, you can let it simmer for a bit longer.

Ingredients
Arugula Wild Rice Salad
- 1 cup wild rice
- 5 ounces baby arugula
- 1 cup halved grapes
- ā cup toasted almonds (chopped)
- Ā¼ cup goat cheese
- 2 tablespoons EACH: mint, dill, and basil
Lemon Poppy Seed Dressing
- Juice of 1 Ā½ lemons (about ā cup )
- 2 teaspoons EACH: dijon mustard and honey
- A good pinch of sea salt
- Ā½ cup olive oil
- 1 tablespoon poppy seeds
Instructions
- Place the wild rice in a medium-sized pot with 3 cups of cold water. Bring to a boil over high heat then reduce the heat to medium-low. Simmer the rice, covered, for 40-60 minutes. (The cooking time can vary widely.) Check the rice after 40 minutes. It is done when many of the kernelsĀ have burst open. Remove the lid and let the water evaporate before removing the rice from the heat and letting it cool.1 cup wild rice
- While the rice is cooking, make the salad dressing. In a medium-sized bowl, whisk the lemon juice, dijon, honey, and sea salt. Continue to whisk while slowly adding the oil. The dressing will turn creamy. Whisk in the poppy seeds.Juice of 1 Ā½ lemons, 2 teaspoons EACH: dijon mustard and honey, A good pinch of sea salt, Ā½ cup olive oil, 1 tablespoon poppy seeds
- Add the arugula, grapes, almonds, goat cheese, and the herbs to a large salad bowl. Add the cooked and cooled wild rice. Pour about Ā½ the dressing over the salad and toss. While I’ve never tried this recipe with dried herbs, the typical conversion is 1 teaspoon of dried herbs to 1 tablespoon of fresh herbs. I hope that helps!

This salad is so good. Ā It’s become my “go to” salad to take to parties and pot lucks as everyone likes it and it is so different. Ā I make it exactly as written although I have forgotten to add the goat cheese and it’s still delicious. For a crowd I just double all the ingredients except for the dressing and it’s perfect.Ā
