Making mayonnaise is really just whisking egg yolks together with oil to create an emulsion. You add a little lemon juice to the egg yolks at the beginning then slowly whisk in the oil. The process happens very quickly and within less than 5 minutes you’ll have a bowlful of tasty mayo that you can use as is or flavour anyway you like.
